Recipe: Coke Can Chicken

Karen Harris  (Incredibly moist and delicious!  Great with or without the sauce.)

BBQ Rub (recipe below)
1 (4lb) whole chicken
Extra Virgin Olive Oil
One 12 oz Can Coke (or Cola)
Cola BBQ Sauce (Optional. Recipe below)

  1. Make BBQ rub. 
  2. Rub EVOO all over skin of chicken.  Reserving 1.5 tsp of rub, sprinkle BBQ rub generously all over chicken. 
  3.  Pour out ¾ C of Coke and reserve for Cola BBQ sauce, leaving remaining cola in can.  Make 2-3 additional holes in top of can.  With can in roasting pan, spoon 1 ½ tsp rub into cola can.  Cola will start to foam.  Place Chicken upright onto cola can fitting can into cavity.  Pull legs forward to form a tripod, allowing chicken to stand upright. 
  4. You can bake in oven or cook on grill.  In oven, place on a lower rack so the chicken has plenty of room to stand.  Bake at 350 until dark meat registers 180.  For grill: Prepare hot grill – (light only 1 side of grill.  Place chicken upright over a drip pan.  Grill covered with lid down, 1 hour and 15 mins.) 

BBQ Rub: (Great to make a big batch!)
3 TBS mild chili powder
6 tsp salt
6 tsp light brown sugar
3 tsp pepper
3 tsp ground cumin
1 1/2 tsp garlic powder
Pinch of cayenne pepper (use more if you like it spicy)

COLA BBQ Sauce:  (This sauce is delicious, but the chicken is amazing without it!)
1 TBS butter
1/2 small onion, minced
1 TBS minced fresh ginger
1 garlic clove, minced
3/4 c reserved Coke
3/4 c ketchup
2 TBS fresh lemon juice
2 TBS Worchestershire sauce
2 TBS A1 steak sauce
1/2 tsp pepper
1/2 tsp liquid smoke
salt to taste
1/2 tsp lemon rind grated
